Cacao
We curate premium Mexican cacaos that capture the Mesoamerican chocolate tradition. Each variety (artisan, Mexican, gourmet, with stevia) answers a distinct aromatic profile without compromising the purity of the base ingredient.
The Albye curation
Full catalog: flavor, object, and the book by Alberto Galván.
Twelve families make up the Albye curation. From Mexican flavor (artisan cacao, hand-harvested sea salt flakes, kombu kelp, and stevia-sweetened gourmet preserves) to the objects that elevate the ritual of eating (unbreakable Tritan glassware, cast iron fondues, professional PVC capsules) and the book by Alberto Galván.
All share the same discipline: natural ingredients, honest processes, manufacture with purpose. Not every artisan product is good; not every industrial product is bad. What enters the catalog survives the test of flavor, durability, and transparency.
Each family brings its own grammar. Cacao speaks in bitter, Mesoamerican notes; sea salt underlines what the dish already has; kombu kelp introduces marine umami; preserves sweeten without guilt; glassware endures falls without losing clarity; cast iron distributes heat with patience; capsules sign the professional packaging. Together they build the complete vocabulary of the honest table. The editorial memory lives in the Journal, not in the catalog.
Curation favors small-batch production, direct traceability with the producer, and the total absence of unnecessary additives or industrial shortcuts. Each piece earns its place by merit, not by volume of supply.
The result is a brief, edited, memorable catalog. Made for the attentive cook, the demanding host, and the gift that endures: from the everyday occasion to the end-of-year corporate package.

Single origin
We curate premium Mexican cacaos that capture the Mesoamerican chocolate tradition. Each variety (artisan, Mexican, gourmet, with stevia) answers a distinct aromatic profile without compromising the purity of the base ingredient.

Pleasure without sugar
Chocolate made exclusively with natural stevia, with no added sugars or artificial sweeteners. Keeps the bitter intensity of Mexican cacao.

Ancestral protein
Roasted seasoned grasshopper, a Mesoamerican snack with 75% gourmet protein. Three aromatic profiles for different moments: fresh lemon, smoked chipotle, and traditional Oaxacan mole.

Hand-harvested
Fine sea salt crystals evaporated under the sun. Our Natural Sea Salt Flakes preserve the living minerals of the sea: a noble mineral that enhances without masking.

Ancestral ingredients
Living sea salt as a canvas for two ancestral Mexican ingredients: the maguey worm and the grasshopper. Each crystal concentrates the earthy, umami flavor that has defined Mexican cuisine for centuries.

Living minerals
Dehydrated kombu seaweed in ready-to-use strips. Natural umami, marine minerals, and unmistakable texture for broths, soups, marinades, and gourmet preparations.

With stevia or with sugar
Gourmet passionfruit, jackfruit, and lychee preserves. Each recipe comes in two versions: sweetened with stevia, or the traditional recipe with sugar.

Technical Tritan
Tempered Tritan glassware in four formats: Tequila, Whisky, HighBall, and Maxi. Unbreakable in falls from normal height, resistant to thermal shock, with optical clarity comparable to traditional glass.

Forged iron
Traditional cast iron fondue set in three finishes. Matte Black has the pot enamelled inside; Glossy Black is enamelled inside and across the whole set outside; White is fully enamelled. Cast iron provides uniform thermal distribution and heat memory that turns cheese, chocolate, or broths into shared ceremony.

Bottle finish
Heat-shrink capsules for wineries, gourmet oils, and demanding collectors. In PVC for wine and spirits, and in polylaminate for sparkling wines.
