How each piece is curated.

All curation goes through three questions, in this order. If one fails, the product does not enter the catalog. That is what distinguishes an honest selection from any assortment.

  1. Origin

    Where does it come from? Mexican geography decides before the recipe. If the ingredient has no clear terroir, we are not interested.

  2. Craft

    How is it made? The process must respect natural time. Anything rushed with chemicals loses the character we want.

  3. Table

    How does it arrive? The object matters as much as the content. The presentation, the packaging, how it appears on your table.
