How it's made
The bean ferments in wooden boxes for five to seven days, turned by hand so the heat reaches every part evenly. This first stage defines the cacao's aromatic character and cannot be shortened without losing body.
After sun drying comes the slow conching: more than twenty hours of continuous movement at low temperature. That is where the bitter notes round off and the final notes of dried fruit and toasted wood appear.
